Chef Nick Benniger visits Adam and Hannie van Bergeijk, fifth generation dairy farmers who came to Canada from Holland in the early 90’s. While they loved their new country, they could not find decent Gouda cheese. They decided to make it themselves on their self-sustained farm, from growing the feed to milking the cows. We see the whole cheesemaking process then Nick cooks poutine over a fire for the family, topping French fries with cheese curds, fried shallots, mushrooms and bacon.
