Robert and Lisa Shuh are West Montrose, ON, multigenerational farmers with a son who plans on taking over the business once they retire. After trying a variety of crops Robert determined that, despite the challenges of the winds, cold and soil type in the region, apples could be viable. His experiment has been fruitful, and seasonal agricultural workers from Jamaica help harvest the crop from their 50-acre orchard. Chef Nick watches the workers pick apples then cooks up some Honeycrisp apple sauce with added lemon zest and juice, apple salad and jerk chicken with cilantro sauce.
