In the Mohawk community of Kahnawake, Quebec, Rich Francis learns the ancient technique of spear-fishing for walleye.  With Treena DeLormier, a Mohawk professor of Nutrition at McGill University, Rich meets Christine Zachary-Deom, Kanawake’s Chief of Council, who makes her famous “Mohawk Minestrone”, her take on traditional corn soup.  Rich learns about the history and relevance of walleye to the St. Lawrence and Great Lakes Mohawk people. At the firepit he creates some new and exciting sturgeon dishes. 

In the Wild Game Series, chef Rich Francis explores indigenous communities across Canada and traditional and modern methods of harvesting and preparing the food that has shaped their cultures over the millennia.
