In the Inuvialuit community of Inuvik, NWT, Rich Francis learns about the largest wild animal harvested on Turtle Island - the beluga whale. Jimmy Kalinek, a local guide and hunter, harvests beluga for the community. Hank Rogers, an Elder, has been harvesting whale for over 60 years. Over a meal of Muktuk, the whale’s skin lined with the beluga fat, and Kilituk, dried whale meat dipped in rendered whale fat, Rich learns how these staples have kept the Inuvialuit fed and warm on the Beaufort Delta. This important food source has helped shape the culture of the Inuvialuit people. In the coastal shallows, he sees how whale is processed and harvested, meets the family working at their camp, and learns about the history and relevance of beluga to the Inuvialuit. At the firepit, Rich creates some new beluga dishes.
In the Wild Game Series, chef Rich Francis explores indigenous communities across Canada and traditional and modern methods of harvesting and preparing the food that has shaped their cultures over the millennia.
