In the Inuvialuit community of Inuvik, NWT, Rich Francis learns about one of Turtle Island’s most important foods - the caribou! Jimmy Kalinek, a guide and hunter has been hunting and eating caribou his whole life. Over a traditional meal of caribou kidney, heart and tongue soup he learns how this staple food source has kept the Inuvialuit healthy, and how this important food source has helped shape the culture of the Inuvialuit people. On the west coast of Richard’s Island, Rich learns the how caribou is harvested and processed, and hears about the history and relevance of caribou to the Inuvialuit of the Beaufort. Rich brings his new learnings to the firepit to create some exciting Caribou dishes.

In the Wild Game Series, chef Rich Francis explores indigenous communities across Canada and traditional and modern methods of harvesting and preparing the food that has shaped their cultures over the millennia.
