Once prominent and successful beef farmers, Mark and Jessie Gerber of Oakridge Acres in Ayr, Ontario made a major change in 2004 when they became bison farmers. Jessie runs the Country Meat store, and her dad works in the fields and tends the herd. Chef Nick Benninger cooks bison burgers for them over an outdoor fire serving them with roasted bison marrow butter and sautéed onions.
